Cardamom

Cardamom also known or referred to as cardamon, the world's third most expensive spice by weight, and derived from the Latin  cardamomum, actually is named for several plants. These species belong to similar genera, namely Elettaria and Amomum, both in the Zingiberaceae family, i.e., Ginger!!!

The two genera are native to some regions of South Asia, only in the regions of India, Pakistan, Nepal and Bhutan. The two genera are not reported locally in the wild in Bangladesh, Sri Lanka or Maldives. The crop has been grown in many parts of the world, and India is not the largest producer and exporter of cardamom. The credit goes to Guatemala, surprise of surprises. India is the second largest producer and exporter of cardamom.

The Latin cardamomum, is derived from the Greek Kardamomon, that was a name that was historically given to the plant from India, known as a chosen spice or aromatic plant. Its known from ancient times, also the Mycenaean Greek - ka-da-mi-ia. The modern genus Elettaria, however, is derived from native South Asian words, ilaychi [Hindi], ilaichi [Punjabi], ela [Sanskrit] or ellka or elakai [Telugu, Tamil, Malayalam], elakki [Kannada]. Of course, the word kai is a Dravidian loan-blend for 'vegetable'. There is a slight distinction, though. Elettaria pods are light green, while the larger Amomum pods are dark brown.

Elettaria is commonly known as 'green cardamom' while Amomum is known as 'black cardamom'. There are several variants in Amomum, including brown cardamom, Java cardamom, Bengal cardamom, white cardamom or red cardamom.

Recipe - Heat 3 tbsp oil on a tava. Add ajwain and grated onions, ginger and garlic. When the mixture is nicely fried, add tomatoes, cashewnuts and all the spices and the paneer. Cook over a slow fire till the mixture coats the paneer pieces or vegetables. Garnish with coriander. Can be served with bread, roti, naan or paratha.

Recipe - Kashmiri Tikki Masala Paste - Gives added flavour to - veg or non-veg curries, sandwiches, pizzas, spaghetti, chinese and continental dishes, and add to curd to marinate tandoori chicken and fish.
Method - mix small amount of water to form thin paste, add oil to retain paste form. Store in glass jar for longer shelf life.

Recipe for Butter Chicken with Makhani Bhuna Masala - Heat butter in a pan. Add chicken pieces and fry till golden brown. Add all powdered spices and saute for 1 minute. Mix bhuna masala and water together in a bowl and add to the chicken. Bring to a boil and cook for 15 minutes or till chicken is done. Then add 2 tbsp cream, simmer for 2 minutes. Serve garnished with the remaining cream, ginger juiliennes, coriander leaves and green chillies.

Korma Bhuna Masala

Recipe for meat korma - Heat ghee in a karahi, add green chillies, all powdered spices and fry for 1/2 a min. Add meat and fry for 10 minutes. Add curd and cook for 5 minutes. Mix Bhuna Masala and water together in a bowl and add to the meat. Bring to a boil and simmer till meat is done. Serve garnished with coriander leaves and ginger juliennes.

Kolhapuri Pandra Rassa Masala (Kolhapuri White Gravy Masala)

Recipe - 500 gm meat. 2 glass of water and salt and boil for 20-25 minutes. keep aside. 3-4 tbspn cooking oil, heat, add 4 green chillis, 5 black pepper, 2 cloves, 2 small pieces of cinnamon, pour stock of meat (chicken or mutton).

1/2 coconut - dessicated - crush and remove milk. In coconut milk, mix Maratha Darbar's Kolhapuri Pandhara Rassa Masala. Pour in water to dilute, taste and salt. Stir up to boiling stage and serve.

Meat Masala

Recipe - Marinate clean and cut pieces of 500 gm mutton for 2 hours in a mixture of 2 onions ground to a fine paste, 1 tbsp ginger-garlic paste, 4 tbsp strained curd and salt. Heat 5 tbsp oil and fry 2 sliced onions till crisp. Add marinated meat and 3 tbsp Nilons Meat Masala. Stir for 5 min. Add 2 cups water and keep in pressure cooker for 10 min. remove from fire, serve warm with rice or bread (roti /naan).

Pav Bhaji Masala

Brand - Nilon's Premium Pav Bhaji Masala 
Recipe - Heat 2 tbsp oil in a pan, add 2 tbsp of ginger garlic paste and 2 mediume sized chopped onion. Fry till it turns golden colour. Add 1 to 1 1/2 medium sized chopped green capsicum and saute well. Add 1 tbsp of chilli powder, 2 chopped tomatoes, 2 tbsp of Nilons Pav Bhaji Masala and salt as per taste and stir well. Add 500 gm boiled vegetables like potatoes, cauliflower, green peas. Then mash it and mix well. Add a cube of butter and sprinkle chopped coriander leaves. Serve with buttered pav (bread), chopped onion and a wedge of lemon.
